Today was an amazing day I had lunch with two lovely friends in a new Vegetarian Deli in Englewood, NJ. New in the sense that they just started serving a totally Vegetarian menu with Vegan options. The owner has owned the store for 16years! What is new is that he became very Ill with heart problems he had surgery and is doctor told him if he does not change his eating habits he was not going to make it! He became vegetarian lost 45 pounds and was feeling Fantastic!! Then he said as he was preparing all that chicken everyday his conscience awakened. Here is how he explains it , as I was boiling, chopping, broiling, chickens I noticed all these chicken parts every where and I just could not do it any longer I was really feeling bad for all the chickens. I severed 800 people a day but I did not want to cook animals any longer!!! I feel that this is such a beautiful and natural transformation as we start to eat a plant based diet this does happen very naturally. When I first changed my eating habits I gave up Meat first. I was eating cheese ,chicken and fish with my veggies then one day I just could not stand the taste of chicken any longer it made me so sick. Then I gave up cheese and yogurt, I saw how much mucus I had and the terrible pains in my stomach I would get from eating dairy. Lastly about one year ago I really could not stand the smell or taste of fish. If everyone would try this it really does happen naturally and on its own you do not feel deprived you really do not want to eat animals at all. Evergreen fine fresh foods is a raw jewel for NJ as in Bergen County I cannot even find a Juice bar never mind a Vegetarian restaurant. Their food is so fresh the place is clean, the staff members are kind and Happy people and some of them are getting their certificate in Yoga and they feel that they want to give back to the community! You can refill your water bottles for free and the food is delicious! You can get Wheat grass and fresh pressed Juice. This is big for NJ we need more places like this that is why I am asking all my Vegetarian and Vegan friends to go and support them and Enjoy this amazing food!

Sprouts Super Food
I have been having sprouting classes at my home and lectures out side my home. People ask me why SPROUT well one of the Major problems is what we do to our soil and the air and our water supply everything we take into our food. We have decided that we were going to spray everything with every Pesticides , Herbicides,Fungicides. We are genetically modifying (GMO) everything we know nothing about. In the mean time Cancer rate is going up Heart disease is going up strokes rates are up.If you want to see what is wrong take a good look at your plates we are stuffing our self's with highly processed nutritionally depleted foods, 1/4 of what we eat keeps us alive 3/4 of what we eat keeps our doctors alive. Can we genetically improve the way everything has been created??? Well Maybe but not the way we have been doing it!! We are suffering from Chronic Malnutrition and if you think we are going to go to the doctor to get a pill for everything that is wrong we have Missed the whole point. There are a lot more people turning to Alternative, because what has been put in front of them does not work! There is no magic bullet! But there is a LIFE STYLE CHANGE it is simple it is safe and it is cheap and its effect the solutions are here they have always been here YOU ARE WHAT YOU EAT, food does matter ! Its a choice you do not have to be SICK! We need to get back to the foods of our creator!! Foods that GOD your Higher Power, put on this EARTH Fruits Veggies WHOLE GRAINS, BEANS natural spices. What sprouting does is takes these powerful foods and makes them SUPER FOODS!! Because of all the Live Powerful Enzymes!!
What are the health benefits?
Sprouts are a living food. What does that mean exactly? Sprouts continue to grow slowly and gain extra vitamin content even after harvesting. They are considered highly nutritious and are packed with a multitude of health benefits. Sprouts are very rich in beneficial enzymes, phytochemicals, vitamins, minerals and proteins. So how do all the healthy things packed into sprouts benefit you?
- Enzymes aid in digestion: Eating an enzyme-rich food like sprouts, helps our bodies break down the nutrients in our food easier. Food enzymes are only found in uncooked foods. Cooking kills them. Research has shown that sprouts are the most powerful enzyme-rich food. As we age, we produce less digestive enzymes, which can make us more susceptible to the effects of aging and certain diseases. Some people call sprouts the “Fountain of Youth.”
- Phytochemicals help fight diseases: Phytochemical compounds are only found in plant based foods. Research has shown that they may help reduce the effects of aging and decrease the risk of cancer, cardiovascular disease, high blood pressure, cataracts, urinary tract infection, osteoporosis and boost the immune system..
- Vitamins and minerals are important for normal body function: Sprouts are bursting with a high content of vitamins and minerals, which help keep the body functioning properly and in proper balance. Deficiencies can lead to certain diseases, such as cancer, osteoporosis and heart disease.
- Contains easily digestible proteins: Sprouts are a nutrition dense food that contain up to 35% protein. The protein in sprouts is easily digested, because during sprouting the complex compounds in the seed are converted to their simplest form in the sprouts.
Why Grow Sprouts?
Sprouts, as we discussed, have a lot of health benefits and are easy, fast and inexpensive to grow. Inexpensive kits can be bought online or at health food stores. The sprouting seeds can be bought online or at some grocery or health food stores. You can grow tasty, fresh, nutritious sprouts all year long in the comfort of your own home. And it takes less than 5 minutes a day of your time for 3 to 7 days, depending on what sprouts you are growing and requires no soil. It is a lot less work than growing a vegetable garden where some vegetables that you plant can take up to 90 days to grow.

Elite Hummus
Yesterday my friends and I went to check out Elite Hummus a Kosher Restaurant in Englewood,NJ
At Elite they use only the best ingredients, including organic produce. There hummus is freshly made several times a day with the highest quality imported spices and no added preservatives. Let me tell you there Olive Oil is great quality my family in Italy own a Olive farm and I know amazing olive oil when I taste it!! The majority of there menu is vegetarian (and even vegan). If you love hummus I defiantly recommend you check this place out. You get very large portions! They have different takes on hummus Fava Bean , Mushrooms Delish!! We ate like queens started with Quinoa Salad and Moroccan Cigars which is Filo dough stuffed with Soybeans very tasty!! I am really getting excited about all these new places in NJ that are opening up and they have Vegetarian and Vegan Options!!! Only 5 years ago there was no place to go in NJ if you were vegan except for places that serve Mock Meats and I am not a Fan of Soy unless it is fermented Tempeh, Natto or Miso!!! The bill was only 45.00 for 3 people and I brought my hummus home I could not even finish it all!! So things are looking good for NJ Vegans I will keep posting all the new great Restaurants that serve Vegan and Vegetarian options!!

New Year New You!
True life is lived when tiny changes occur.
-Leo Tolstoy
For me change always accorded very slowly. It took me about 10 years to find what foods work for me. Its only now at 50 years old that I know what actually resonate with me . I love doing Yoga and working out with weights. When I was younger I absolutely hated working out!! I believe that I got to this place only when I slowed down and started meditating. I was working 50 to 60 hour weeks just not to feel or listen to my body and thoughts.
A lot of people begin the New Year by making resolutions. We’ve all been there. We take a vow to lose weight, exercise more or spend more time with our family. We start the year with great intentions, but then we quickly relapse into old habits. Why is it so hard to stick to those New Year’s resolutions?
Here are some ways you can make your intentions a reality this year:
1. Write down your intentions and keep them in a visible place, like taped to your bedroom mirror or the dashboard of your car.
2. Get to the source of whatever is keeping you in a rut. Are you in a stressful relationship that causes you to eat a pint of Ben & Jerry’s every night? Are you stressed at work and feel too tired to exercise after work? If you don’t tackle the root of the behavior, it will be much harder to accomplish your goal.
3. Be clear about what your life would look like once you achieve your goal. If you resolve to go to
the gym more, how will this benefit you? Get connected to the result of your action, and you will be more likely to stick with your plan.
4. Share your resolutions with friends and family. Hold each other accountable for achieving your
goals. If you want to go to the gym more, have a friend call you two or three times a week to check on you or invite them to join you.
5. Reward yourself with every little accomplishment. If your intention is to lose weight and you lose 1pound a week, pamper yourself with a massage.
Big changes do not require big leaps. Permanent change is more likely to happen gradually than through one big restrictive plan. Allow yourself to climb the ladder one rung at a time.
Happy New Year!
